嗜酸人必愛紅紅火火湯 Red Hot Soup Loved by Sour Food Enthusiasts

我選擇煮一鍋酸酸的、清爽不膩的羅宋湯給自己獨享。那天,在去超市的過程腳步輕盈雀躍,到了超市認真挑選想要放入湯品的新鮮牛番茄、蘑菇,以及洋蔥。啊!差點忘了買馬鈴薯回家!帶著這些食材,我到了櫃檯結帳,裝著這些美味行囊,回家的步伐更加輕鬆且期待。回到家,我換了一身舒服的居家裝扮,開始清潔雙手、分裝蔬菜、清洗蔬果。滿上過濾水,倒入鍋中,打開瓦斯爐打水燒開,我一邊把握這時間,一邊處理食材。首先,將紅紅的番茄對切、再對切,有的再切小塊,希望將味道更融入湯內;再來,我將洋菇用紙巾擦乾淨,對半切、放置於盤中備著;最後,我將洋蔥切的碎碎的,希望在入口時能有好的口感。處理完材料,水也剛好燒開,將火轉小,我將食材先放到一旁的鍋中炒開,放入一點點橄欖油,陸續加入食材,最後放入蘑菇以及一小小塊的奶油,最後將炒過的食材加入至燒開的水中。放入一些月桂葉、乾式香料,等候滾開後加鹽調味。

I chose to cook a pot of tangy, refreshing, and light Russian borscht just for myself. That day, my steps were light and joyful as I headed to the supermarket. At the supermarket, I carefully selected fresh beef tomatoes, mushrooms, and onions for the soup. Oh! I almost forgot to buy potatoes! With these ingredients in hand, I went to the checkout counter. Carrying my delicious ingredients, my steps home were even lighter and filled with anticipation.
When I got home, I changed into comfortable home clothes, cleaned my hands, and started preparing the vegetables and washing the produce. I filled the pot with filtered water and turned on the gas stove to bring the water to a boil. While waiting, I prepped the ingredients. First, I cut the bright red tomatoes into quarters and then smaller pieces to better infuse the soup with their flavor. Next, I wiped the mushrooms clean with a paper towel, cut them in half, and set them aside on a plate. Lastly, I finely chopped the onion to ensure a good texture when eating.
Just as I finished prepping, the water started to boil. I turned the heat down and began sautéing the ingredients in a separate pan with a bit of olive oil. I gradually added the vegetables, finishing with the mushrooms and a small pat of butter. Once everything was sautéed, I transferred the mixture to the boiling water. I added a few bay leaves and some dried herbs, then waited for it to boil again before seasoning with salt.
My personal borscht was ready! This was a flavor I enjoyed alone, different from my family who preferred salty and sweet dishes. Mmm, it tasted really good!

National Museum of Taiwan History's First NFT Experimental Project on Public Dining Memories《Time-Space Dining Tables》


「國立臺灣歷史博物館」為推動國家文化記憶庫之永續發展,融入當代議題、常民生活及在地關懷,連結博物館專業、數位創新思維與多元社群行動,以促進臺灣原生文化之活化運用,鼓勵全民共同開展記憶庫多元主題與主題素材近用。
本計畫案於112年推出《島嶼庫客 Islands Cooker》飲食記憶系列7支影片,探究臺灣飲食的歷史成因,113年延續「餐桌」的概念,加入「未來」元素,委由畸零地創造股份有限公司辦理《島嶼未來料理教室——NFT設計工作坊》,以記憶庫長期深耕之飲食記憶主題,透過非同質化代幣(Non-Fungible Token,以下簡稱 NFT)設計工作坊,增進記憶庫之內容與應用,落實臺灣原生文化之推廣。
《島嶼未來料理教室——NFT設計工作坊》以「推測設計」為核心,反思記憶料理的獨特性,其之於 NFT的當代意義及其飲食文化價值,並將工作坊延伸設計為「發掘身體飲食記憶,運用想像和推測來創造未來島嶼飲食文化」的參與式體驗活動。工作坊由編舞家與引導師,透過一連串的帶領、想像和對話,挖掘及連結蘊藏身體感知中的飲食記憶,並讓參與者書寫飲食記憶;接著由畸零地工作室與生成式AI 「ChatGPT 4o」協作製作出 「記憶食譜 NFT」及文字翻譯;最後線上場以「圍爐」的概念,讓參與者在雲端上互相分享與交流。
這些飲食記憶透過NFT不可替代、數位交換的特性,被永久保存並流傳,期望每個人都能回首屬於自己的飲食記憶和歷史,經由公共化的途徑與媒介,成為社會記憶的一部份,構築社群認同的可能。

By delving into the long-term themes of culinary memories from the Taiwan Cultural Memory Bank and utilizing the Non-Fungible Token (NFT) design workshop, the project aims to enhance the content and application of the memory bank, promoting the dissemination of Taiwan's indigenous culture.
The "Islands Future Cuisine Classroom—NFT Design Workshop" centers on "speculative design," reflecting on the uniqueness of memory cuisine and its contemporary significance and culinary cultural value in relation to NFTs. The workshop is extended into a participatory experiential activity, designed as "discovering culinary memories in body and using imagination and speculation to create future island culinary culture." The workshop, led by choreographers and facilitators, guides participants through a series of activities, including imagination and dialogue, to uncover and connect with culinary memories embedded in their bodily perceptions. Participants then write down their culinary memories. Next, Ground Zero Co., Ltd. collaborates with the generative AI "ChatGPT 4o" to create "Memory Recipe NFTs" and translate the texts. Finally, the online session, based on the concept of "reunion dinner," allows participants to share and exchange their experiences and creations in the cloud.
These culinary memories, preserved and circulated through the non-fungible and digital exchange characteristics of NFTs, are expected to be permanently stored and shared. The goal is for everyone to reflect on their own culinary memories and histories, making them part of societal memory through public pathways and media, thereby fostering a sense of community identity.
