暖暖湯 Warm Soup

"排骨番茄馬鈴薯紅蘿蔔燉湯
那是小時候媽媽會在我生病時煮的湯,排骨會買比較有肉的部分,川燙後撈起、本地的馬鈴薯兩顆,先削皮切塊,紅蘿蔔也是削皮切塊,另外兩顆牛番茄,大概40分鐘左右。
我不太喜歡也不太吃紅蘿蔔,但如果跟排骨番茄一起煮的話,紅蘿蔔就不會有騷味,那是我幾乎唯一能把紅蘿蔔吃下去的方式。
也因為如此,我媽更常煮這個湯給我喝,因為我從小眼睛不好,為了讓我能吃紅蘿蔔,這是方法之一。
湯喝起來一點酸、一點鹹還有排骨的甜味,湯看起來微微紅紅的,因為有番茄的關係,喝一口之後,肚子會暖起來,如果覺得餓,在吃一口馬鈴薯、就會有飽足感。
那是小時候開始的記憶,但這個湯一直衍生到現在,我結婚了,每週會煮一次,但可能是我自己煮的原因,因此少了紅蘿蔔。對我來說,只要能夠做出這頓湯,就會有家的感覺,是一種安慰!
這碗湯也像是跟媽媽的連結,直到我結婚,媽媽還是會幫我買排骨,幫我準備頓湯的食材,現在除了我之外,我的太太也習慣煮這碗湯,湯與媽媽的連結,在傳遞至下一個家庭!
也讓我思考關於成家與食物料理的關係,一個家,在回應身體與感官上的滿足以及溫飽,像是必然條件!
而餐桌是一種共享集體的連結,
生命的連結、土地的連結、關係的連結、經濟的連結,甚至是環境,而完整的顯現在餐桌,我們的嘴、胃,以及細胞之中!
Pork Rib, Tomato, Potato, and Carrot Stew
This is the soup my mom used to make when I was sick as a child. She would buy pork ribs with a good amount of meat, blanch them, and then add two local potatoes, peeled and cut into pieces, along with peeled and chopped carrots, and two beef tomatoes. Everything would simmer for about 40 minutes.
I don’t particularly like or eat carrots, but when they are cooked with pork ribs and tomatoes, the carrots lose their strong taste. This is almost the only way I can eat carrots. Because of this, my mom often made this soup for me, knowing it was a way to help me eat carrots since I had poor eyesight from a young age.
The soup tastes slightly sour, and a bit salty, with the sweetness of the pork ribs. It looks slightly red due to the tomatoes. After drinking a bowl, my stomach feels warm, and if I’m hungry, a bite of potato provides a satisfying feeling.
This memory started in my childhood, but the soup has continued into my adulthood. Now that I am married, I make this soup weekly, though my version often lacks carrots. For me, making this soup gives me a sense of home and comfort.
This soup also represents a connection with my mom. Even after I got married, she would still help me buy pork ribs and prepare the ingredients for the soup. Now, my wife also makes this soup, continuing the tradition and the connection with my mom in our new family.
This makes me reflect on the relationship between starting a family and cooking food. A home responds to the body’s and senses’ needs for satisfaction and warmth; it seems essential.
The dining table is a place of shared connections—life connections, land connections, relationship connections, economic connections, and even environmental connections—all manifesting fully at the table, in our mouths, stomachs, and cells.

本計畫案於112年推出《島嶼庫客 Islands Cooker》飲食記憶系列7支影片,探究臺灣飲食的歷史成因,113年延續「餐桌」的概念,加入「未來」元素,委由畸零地創造股份有限公司辦理《島嶼未來料理教室——NFT設計工作坊》,以記憶庫長期深耕之飲食記憶主題,透過非同質化代幣(Non-Fungible Token,以下簡稱 NFT)設計工作坊,增進記憶庫之內容與應用,落實臺灣原生文化之推廣。
《島嶼未來料理教室——NFT設計工作坊》以「推測設計」為核心,反思記憶料理的獨特性,其之於 NFT的當代意義及其飲食文化價值,並將工作坊延伸設計為「發掘身體飲食記憶,運用想像和推測來創造未來島嶼飲食文化」的參與式體驗活動。工作坊由編舞家與引導師,透過一連串的帶領、想像和對話,挖掘及連結蘊藏身體感知中的飲食記憶,並讓參與者書寫飲食記憶;接著由畸零地工作室與生成式AI 「ChatGPT 4o」協作製作出 「記憶食譜 NFT」及文字翻譯;最後線上場以「圍爐」的概念,讓參與者在雲端上互相分享與交流。
這些飲食記憶透過NFT不可替代、數位交換的特性,被永久保存並流傳,期望每個人都能回首屬於自己的飲食記憶和歷史,經由公共化的途徑與媒介,成為社會記憶的一部份,構築社群認同的可能。

The "Islands Future Cuisine Classroom—NFT Design Workshop" centers on "speculative design," reflecting on the uniqueness of memory cuisine and its contemporary significance and culinary cultural value in relation to NFTs. The workshop is extended into a participatory experiential activity, designed as "discovering culinary memories in body and using imagination and speculation to create future island culinary culture." The workshop, led by choreographers and facilitators, guides participants through a series of activities, including imagination and dialogue, to uncover and connect with culinary memories embedded in their bodily perceptions. Participants then write down their culinary memories. Next, Ground Zero Co., Ltd. collaborates with the generative AI "ChatGPT 4o" to create "Memory Recipe NFTs" and translate the texts. Finally, the online session, based on the concept of "reunion dinner," allows participants to share and exchange their experiences and creations in the cloud.
These culinary memories, preserved and circulated through the non-fungible and digital exchange characteristics of NFTs, are expected to be permanently stored and shared. The goal is for everyone to reflect on their own culinary memories and histories, making them part of societal memory through public pathways and media, thereby fostering a sense of community identity.
